Garrison Brothers was the first legal whiskey distillery in Texas, and Small Batch is the bourbon Dan Garrison built it around — a wheated mashbill aged in small barrels through Hill Country summers that cook whiskey faster than Kentucky ever could. Garrison, a former software marketer, founded the distillery in Hye in 2006 after the Enron collapse, trained under Elmer T. Lee, and shipped his first bottle in 2010; the distillery has since won more than 800 awards. Small Batch is 74% Texas Panhandle corn, 15% soft red winter wheat, and 11% malted barley, distilled in copper, aged at least three years in new charred American oak in a barn where summer heat tops 100°F and the angels take twice Kentucky's share, married annually, and bottled by hand at 94 proof. Whiskey Fellow: dark burnt amber and creamy, stone fruit, vanilla, and toffee with oak spice on the nose, toffee, chocolate, and dry leather up front, honey and pecan in the middle, and cedar, clove, and coffee on the finish.
