George Dickel 18 Year is the oldest whiskey Cascade Hollow has ever released and the first one it called bourbon — eighteen years in Tullahoma oak, skipping the Lincoln County charcoal step so it could carry the word, bottled at 90 proof in late 2023. Nicole Austin, the former Kings County distiller who took over Dickel in 2018 and made it a critics' darling with the 13-year Bottled in Bond, found these barrels in the back of the single-story warehouses; the mashbill is Dickel's 84% corn, 8% rye, 8% malted barley, and the whiskey went into new charred oak in 2005 and came out eighteen years later, unmellowed, at 90 proof.
