It starts exactly where every Germana does: sugarcane grown on 300 hectares without chemical additives, hand-cut with machetes at peak ripeness, fermented the 500-year-old way with yellow corn meal and wild native yeasts over two to three weeks, then distilled in copper pot stills over open flame with only the heart kept. Then it waits. Heritage spends eight years in oak before a final two years in Brazilian bálsamo, the native hardwood that lends a peppery, herbaceous bitterness and depth no European cask can — ten years in total, an extraordinary commitment for a category where most bottles are unaged.
