Gracias a Dios Agave Gin is a Mexican gin made from agave rather than grain, by the Oaxacan mezcal house whose name, "Thank God," comes from a phrase its founders heard throughout their childhoods. The team harvests agave from their own plantations, cooks the hearts for four days in traditional wood-fired ovens and crushes them with a horse-drawn stone before fermenting and distilling, then macerates 32 botanicals, one for each state of the Mexican Republic, and distills a third time.
Bottled at 90 proof and double filtered by hand in Matatlán, Oaxaca, it is clear and bright: a symphony of grapefruit, lemon and tangerine on the nose, then a light-bodied, lively palate with noticeable acidity, citrus led by juniper, and a finish sprinkled with black pepper and cardamom, the agave base adding a faint earthy depth.
