Gracias a Dios means thank God; the founders opened a mezcalería in Querétaro in 2010, spent two years touring Mexico for mezcal, met maestro Oscar Hernández Santiago in Santiago Matatlán, and made him an equal partner. The palenque is 100% solar-powered, collects 60% of its water from rain, and plants three agaves for every bottle sold. Reposado starts with the house espadín — eight-year organic agave roasted in a wood-fired earthen oven, crushed by a donkey-drawn tahona, fermented with wild yeast, and double-distilled in copper — then rests four months in ex-bourbon casks, bottled at 45% ABV. Wine Enthusiast found a pale straw hue with vanilla and cigar-wrapper aromas, then a buttery palate of almond, sweet smoke, and peppery clove. Four months is a light touch: the oak softens the espadín's habanero heat and adds vanilla and caramel without burying the herbs and smoke that define the joven. Honest note: reposado mezcal is a divisive category — purists prefer their agave unoaked — but this is the gentle door for whiskey drinkers curious about smoke.
