Koval Single Barrel Rye Whiskey comes from Koval Distillery in Chicago, the first distillery to open in the city since Prohibition and a pioneer of the organic, grain-forward craft whiskey style. Koval makes its rye from 100% organic rye sourced from a Midwestern farm collective, takes only the heart cut of the distillate, and ages it in new charred oak barrels before bottling each barrel individually at 80 proof.
Drinkhacker rated it an A-, finding baking spice with red pepper, charred sugar and toasted barrel on the nose, then chocolate sauce, gingerbread and a touch of mint on the palate, and described it as soft, approachable and equally suited to sipping neat or mixing. Because Koval uses only the heart of the run and a single grain, the whiskey shows the rye itself rather than heavy oak. Founders Robert and Sonat Birnecker built Koval on Austrian distilling tradition, and the rye has become one of the most decorated craft whiskeys out of the Midwest.
