Legent is Fred Noe and Shinji Fukuyo in one bottle — Jim Beam's master distiller and Suntory's chief blender, the man behind Hibiki and Yamazaki, building a Kentucky bourbon with Japanese blending and wine casks. Launched in 2019 after Suntory bought Beam, Legent starts as Kentucky straight bourbon distilled and aged by Noe at Clermont; Fukuyo then takes portions of it and finishes them in red wine casks and Oloroso sherry casks, and blends the three streams — straight bourbon, wine-finished, sherry-finished — the way he'd build a Hibiki, bottled at 94 proof. The house notes: caramel, vanilla, dried fruit, and baking spice on the nose; rich oak, red fruit, toffee, and subtle tannin on the palate; and a warm, elegant finish with spice and sherry richness. Expect a Beam bourbon with the peanut note softened and a layer of raisin, red berry, and dry sherry nuttiness over it — rounder and more complex than the 94 proof suggests.
