Lind & Lime London Dry Gin

James Lind was an Edinburgh-born surgeon's mate aboard HMS Salisbury who, in 1747, selected twelve scurvy-ridden sailors and gave each pair a different remedy — the two on citrus recovered, and he'd conducted what's recognized today as one of the first clinical trials in medical history. Lind & Lime honors him, and the port he sailed from. Founders Ian Stirling and Paddy Fletcher launched it in 2018 as the first spirit from their Port of Leith Distillery project in Edinburgh's historic harbor district, and since 2022 it's been made at a dedicated Leith distillery on Coburg Street, certified organic and B Corp. The recipe is deliberately spare: seven botanicals, all organic, led by juniper, fresh lime peel, and pink peppercorns, with coriander, angelica, orris, and licorice underneath. The botanicals macerate overnight in a 96% neutral grain base before distillation on a 500-liter Genio copper still run entirely on green electricity, bottled at 44% ABV in a ribbed bottle modeled on a 17th-century French wine bottle, "Leith Glass Works" embossed on the base in tribute to the district's glassmaking past — all plastic-free. Expect a crisp, fresh nose of juniper and lime with peppery spice behind, opening into bright citrus, oily juniper, and a warming pepper-and-cardamom spice, finishing refreshingly dry with earthy juniper and lingering lime. One German reviewer called the juniper-lime-pink pepper combination something he'd never encountered. Serve it with good tonic, a lime wedge, and a few pink peppercorns.
