Bill Samuels Sr. founded Maker's Mark in 1953 at Star Hill Farm in Loretto, Kentucky, on a wheated mashbill built to avoid bitterness; Private Selection is the distillery's stave program — a fully matured barrel of cask-strength Maker's is emptied, ten staves are chosen from five profiles (Baked American Pure, Seared French Cuvée, Maker's 46, Roasted French Mocha, Toasted French Spice), the barrel is refilled and finished nine weeks in the limestone cellar, and the result is bottled uncut with the stave recipe on the label. The Barrel Boys chose a different recipe for this barrel than for Coronado Bay Bridge and named it for the cove; check the label for the ten-stave combination — mocha staves lean chocolate and coffee, spice staves lean cinnamon and dried fruit, Cuvée leans caramel. Expect the Maker's wheated softness — caramel, vanilla, and baked bread — amplified by the staves into something richer and darker than the red wax, at a proof that carries it.
