The Four Grain Small Batch is Finger Lakes Distilling's celebration of what the region actually grows. Where the flagship McKenzie Bourbon runs on corn, rye, and barley, this one adds a fourth: 70% Yellow Dent corn, 10% Danko rye, 10% Red Winter wheat, and 10% two-row malted barley, every kernel New York-grown, mashed with water drawn from the aquifers around Seneca Lake — the deepest lake in the state. The distillery, opened on the lake's eastern shore in Burdett in 2007 by two unrelated McKenzies who met at a craft distilling conference, follows a few stubborn rules that shape everything it makes: the whiskey enters the barrel at a low 100 proof rather than the industry-standard 115 to 125, so more of the wood's natural sugars break down and less grain character is lost to dilution, and nothing is chill filtered. This bourbon is produced annually in limited quantities, aged at least four years, and bottled at 100 proof (50% ABV) in accordance with the Bottled-in-Bond Act of 1897. Expect sakura blossom, butterscotch, toasted almond, and clover honey on the nose, opening into a rich, chewy palate of brown sugar, clove, orange peel, cinnamon, and amaretto with grilled peaches, star anise, and brown-butter-baked apples, finishing dry with just enough rye spice to balance the sweetness.
