Siembra Valles Reposado is the Cascahuín lowland blanco rested in oak — David Suro's valley tequila, from the Rosales family distillery in El Arenal since 1904, given a short rest so the terroir still leads. Suro is the Philadelphia restaurateur, author, and agave evangelist behind Siembra Spirits, built to show what Jalisco's best traditional distilleries already do — mature agave, brick ovens, native yeast, copper pots, zero additives — one terroir at a time; Siembra Valles is made at NOM 1123 with master distiller Salvador Rosales Torres. The Reposado is 100% blue Weber agave, mostly grown at Cascahuín, slow-roasted up to seventy-two hours in brick ovens, fermented in stone tanks and stainless with native yeast, double-distilled in copper, rested in used oak for the reposado term, and bottled at 40% ABV, additive-free. Expect the Blanco's buttery cooked agave, wet stone, minerals, olive, and black pepper — Old Town Tequila's A-grade profile — gently rounded by the barrel into a faint vanilla and honey, with the 1123 minerality intact and a long, clean, peppery finish.
