Silks Irish Dry Gin
Silks Irish Dry Gin is the first gin from Boann Distillery in Drogheda, County Meath, the family-run distillery in the Boyne Valley. It is distilled by hand in small batches in a 500-liter custom copper pot still with 14 botanicals, four of them foraged from the family's own property: apple blossom, elderflower, hawthorn blossom and honey from the distillery's bees. The botanicals macerate for 24 hours, then are slowly distilled with a vapor-infusion chamber and cut with deep well water. It is bottled at 42% ABV (84 proof).
Boann describes bright citrus, sweet florals and pine on the nose, a silky palate of orange peel, fresh blossom and apple around the juniper, and a long, rich finish balanced by honey. The name honors the racing silks of Ireland's jockeys, and the gin is as elegant as the label suggests: a beautiful G&T with a slice of apple, a soft Martini or a Bee's Knees.
