Ambré is Trois Rivières' young gold — the blanc given a year to a year and a half in oak, from Martinique's oldest plantation. Trois Rivières was founded in 1660 in Sainte-Luce on Martinique's south coast, named for the three rivers that border its cane fields — Oman, Bois d'Inde, and Saint-Pierre — and it earned the AOC Martinique in 1996; since 2004 its rhums have been made at the Rivière-Pilote distillery under the same house, now owned by Campari. Ambré is fresh estate cane juice, fermented, distilled on a single 22-plate copper column, aged twelve to eighteen months in oak casks, and bottled at 40% ABV with nothing added. Under the AOC, ambré sits between blanc and the three-year vieux — enough wood to gild the rhum and round its edges without burying the cane: expect a nose of fresh cane, vanilla, light toffee, and the grassy, peppery funk of the blanc softened, opening into a smooth, lightly sweet palate of caramel, citrus, and spice with the vegetal edge still audible, finishing moderately long.
