Whip Saw Rye Whiskey comes from Splinter Group Spirits in Napa, California, the project of two of Napa's most respected wine figures: Steve Matthiasson of Matthiasson Wines and Bob Cabral, the longtime winemaker of Williams Selyem. Their idea was to treat whiskey the way they treat wine, and Whip Saw is a blend of sourced rye whiskeys with a mash bill of 76% rye, 21% corn and 3% malted barley, aged up to seven years, then finished in French oak barrels that previously held Matthiasson Cabernet Sauvignon and Williams Selyem Pinot Noir, and bottled at 90 proof.
Drinkhacker rated it an A, 9.5 out of 10, calling it one of the more genuinely unique ryes on the market and recommending it without reservation: gingerbread, butterscotch, rum raisin and cinnamon toast on the nose, baked apple, sweet red apple, honey, raisin and gingerbread on the palate, and a finish of dried flowers, toasted brioche, sesame and dried pineapple.
