Una' is pink, and the pink is a bug. Convite launched it in October 2022 for Breast Cancer Awareness Month, tinting its espadín mezcal with cochineal — the tiny insect that lives on prickly pear cactus and has given Oaxaca its crimson dye since before the Spanish arrived — and donating 10% of every bottle sold to FUCAM, a Mexican breast cancer foundation. Convite is Oaxaca's top-selling mezcal, founded in 2013 and Oaxacan-owned, made in the Zapotec mountains of San Baltazar Guelavila by brothers Cosme "Tucho" and Daniel Hernández, the sixth generation of master distillers in their family. Una' starts with espadín of eight-plus years, cooked in an underground pit oven, milled by a horse-drawn tahona, naturally fermented with spring water, and double-distilled in a copper alembic, then naturally colored; check your label for ABV. It took Gold at the 2022 LA Spirits Awards and the International Craft Awards. Tasting Table calls it a slightly sweet, citrusy sip whose color is appealing and unexpected but whose message should be the focus. Convite's notes: an herbal character with citric tones and a light, sweet mineral touch. Expect the house espadín — clean, herbal, gently smoky — with a soft, bright edge, finishing crisp.
