1821 is Corralejo's extra añejo named for the year Mexico won its independence — the war that began at the hacienda where this tequila is made. Hacienda Corralejo, in Pénjamo, Guanajuato, is the birthplace of Miguel Hidalgo, the Father of Mexico, whose 1810 cry for independence started the war that ended in 1821; the estate sold tequila commercially as early as 1775, is one of the few distilleries outside Jalisco allowed to make it, and was revived by Leonardo Rodríguez Moreno in 1996 at NOM 1368.
