Dulce Vida's Extra Añejo spends five years in Cabernet and Merlot barrels from Napa's Rombauer winery — Drinkhacker calls it not a typical extra añejo, and means it as praise. Dulce Vida launched in 2009 out of Austin as the first 100-proof, USDA-organic tequila, made at NOM 1443, the Don Pilar distillery in the Los Altos highlands, from 100% organic blue Weber agave; the brand runs its own yeast, distillation, and barrels. The 5 Year is organic highland agave cooked, fermented with proprietary yeast, distilled, aged five years in single barrels of American oak that held Rombauer's Cabernet Sauvignon and Merlot, and bottled at 50% ABV, additive-free, with a dark amber-saffron color the wine wood leaves behind. Drinkhacker: a complex, balanced nose of winey grape, raspberry, vanilla, light tannin, caramel, and agave, none dominating, and a bold palate carried by the higher proof — the distinctive barrels and long aging set it apart from every other extra añejo. Expect red fruit, vanilla, caramel, and soft wine tannin over cooked agave, dense and warm at 100 proof, with a very long finish.
