El Mayor is four generations of González distillers in Arandas: master distiller Rodolfo runs Destiladora González Lux, NOM 1603, in the Los Altos highlands with his son Paul and daughter Graciela, growing estate agave at 7,500 feet in sandy, mineral soil. The Rum Cask Finish is 100% estate-grown highland blue Weber agave, fermented with the family yeast, double-distilled in stainless pots with copper coils, aged more than three years in ex-bourbon oak, then finished in ex-rum casks, and bottled at 40% ABV in a limited release; check your bottle for the finishing details.
