G4 is named for four generations of Camarenas making tequila in Los Altos since 1937 — the family behind El Tesoro and Tapatío — and Felipe built El Pandillo, NOM 1579, in Jesús María in 2011 with his sons Luis Felipe and Alan to make additive-free tequila his way: estate agave slow-roasted 22 hours in stone ovens, crushed by a handmade metal tahona he named Felipestein, fermented with the family's agave yeast, double-distilled in copper, and cut with a 50/50 blend of harvested rainwater and spring water. Clásico is that blanco with a tenth of the batch fermented on the agave fibers, bottled at 40% ABV. Sip Sip Olé: clean and crisp with bright citrus and bold cooked agave, like lime squeezed over a roasted agave heart and dropped in a glacier stream — no burn, no aggressive pepper — the fiber-fermented share adding weight and softness without heaviness.
