Beluga Noble is the vodka that made "resting" a luxury claim. Created in 2002 at the Mariinsk Distillery — built in 1900 in a remote corner of Siberia specifically for its artesian water, drawn from 300 meters down through quartz-bearing bedrock — it's made from malt spirit rather than the usual neutral grain, double-filtered through quartz sand and silver, run through a 10.5-meter birch-charcoal column, subtly finished with fractional amounts of honey, oat extract, and milk thistle, and then rested a full 30 days before bottling at 40% ABV. That rest, the brand says, is what rounds the edges. Difford's found mild cracked pepper and grain with faint mussel shell, aniseed, fennel, and lavender honey on the nose, then a very clean palate with a black-pepper bite, charcoal, nuts, and lavender, finishing long and dry with dill and fennel emerging. Intoxicology called it the exception among luxury vodkas that are mostly branding — a pretty damn good vodka that made everything else in the cabinet a letdown.
