Waterloo Barrel-Aged Gin comes from Treaty Oak Distilling in Dripping Springs, in the Texas Hill Country outside Austin, whose original name, Waterloo, gives the gin its label. It takes Waterloo's juniper-forward Texas gin, made with local pecans among its botanicals, and rests it in oak barrels, then bottles it at 47% ABV (94 proof).
The barrel adds vanilla, toasted oak and baking spice over bright juniper and citrus on the nose, then a smooth, rounded palate of caramel, orange peel, coriander and warm spice with light wood and a gentle barrel sweetness, and a long, warming finish of oak, spice and soft juniper. It bridges gin and whiskey, which makes it a natural neat or over ice and in spirit-forward drinks like a Negroni, a Martinez or a gin Old Fashioned.
