Waterloo No.9 Gin
Waterloo No. 9 Gin is the flagship gin of Treaty Oak Distilling, founded in 2006 by Daniel Barnes in Dripping Springs, in the Texas Hill Country west of Austin, whose original name was Waterloo. It is a contemporary grain-based gin distilled on both column and pot stills, cut with Hill Country spring water, with eleven botanicals including juniper, coriander, lavender, ginger and, distinctively, Texas pecans. It is bottled at 47% ABV (94 proof).
Expect a subtle nuttiness from the pecan on the nose with coriander, then a bright palate of jammy citrus and piney juniper evolving toward rosemary, a tingle of ginger, and lavender with lemon and grapefruit through a warm finish. It is a strong cocktail gin: a Negroni, a Gin and Juice, a Tom Collins or a G&T with grapefruit all let its citrus-juniper-floral side shine. A true taste of Texas craft distilling.
