Waterloo Prickly Pear & Rose Gin
Waterloo Prickly Pear & Rose Gin is distilled in small batches at Treaty Oak Distilling in Dripping Springs, in the Texas Hill Country, with prickly pear cactus fruit, rose petals and hibiscus layered over Waterloo's signature botanicals. The fruit and flowers give it a soft blush color and a floral, subtly sweet profile, and it is bottled at 47% ABV (94 proof).
The nose is fragrant rose balanced by fresh citrus and soft juniper; the palate is smooth and lightly sweet with ripe prickly pear, gentle botanicals and a touch of spice over a clean juniper backbone, and the finish is soft and refreshing. It shines with light mixers, tonic, soda or a squeeze of lime, and its color makes it a showpiece in a spritz or a Texas-style Clover Club. A Hill Country twist on pink gin.
