1792 Full Proof was named World Whisky of the Year in Jim Murray's 2020 Whisky Bible, and it's built on a technicality that matters. "Full proof" isn't barrel proof — it's the 125 proof at which the new-make entered the barrel, the legal maximum, with the whiskey brought back to exactly that strength at bottling. Made at the Barton 1792 Distillery in Bardstown, Kentucky — the oldest operating distillery in the town, running since 1879 — from the house high-rye mash bill of roughly 75% corn, 15% rye, and 10% malted barley, it skips Barton's usual chill filtration and passes only through a plate-and-frame filter, keeping the oils and body intact. A 2016 press release put the age around eight and a half years. The Whiskey Wash found burnt amber with legs for days and a nose like a grilled caramel sandwich topped with cinnamon, then all the flavors — caramel, oak, vanilla, smoke, corn flakes, molasses, cinnamon, chocolate-covered coffee beans — tied together by a creamy, buttery mouthfeel. The Whiskey Shelf: an intense, viscous mix of vanilla, caramel, and licorice exploding on the tongue, then smoky oak, cinnamon, orange, and apple. Honest note: reception varies by batch, and Breaking Bourbon has found some releases favor heat over flavor — the 2023 batch was a marked improvement.
