Garrison Brothers is the first legal whiskey distillery in Texas, founded by Dan Garrison in Hye in 2006; the wheated mashbill — 74% Panhandle corn, 15% soft red winter wheat, 11% malted barley — ages in small barrels through Hill Country summers that top 100°F. For Guadalupe, master distiller Donnis Todd selected 122 thirty-gallon barrels filled in 2016, moved them into thirty-five 59-gallon Portuguese tawny port casks in 2020 for two years, and bottled 10,500 numbered bottles at 107 proof; check your bottle for the release year. Breaking Bourbon: candied dark fruit, seasoned oak, and vanilla custard on a bold nose that improves with air; black raspberry and plum leading into peppery oak, tobacco, dark chocolate, coffee crème brûlée, and cinnamon on the palate; and a finish where cinnamon and pepper persist under lingering dark fruit and custard. Drinkhacker and The Whiskey Wash both note the port shows as dark fruit rather than sugar. Honest note: the dessert bourbon of the Garrison range and the one that sells out first in Texas — for the port drinker, the after-dinner pour, and the gift. Neat, after dinner.
