Dareringer is Rabbit Hole's wheated bourbon finished in Pedro Ximénez sherry casks — Uproxx ranked it the best of the core range — named for the founder's wife, Heather, whose family got him into bourbon, at 93 proof. Kaveh Zamanian, a clinical psychologist, founded Rabbit Hole in 2012 and opened the glass-walled downtown Louisville distillery in 2018; Pernod Ricard bought a majority stake in 2019. Dareringer is distilled at Rabbit Hole from a 68% corn, 18% wheat, 14% malted barley mash, aged in wood-fired-toasted, #3-char Kelvin barrels, then finished in casks that held PX — the sweetest, darkest sherry — and bottled at 93 proof. Uproxx: fruit cake, mulled wine, stewed berries, dark chocolate, and walnut with a sweet, short-to-medium finish. The Whiskey Wash finds the PX as raisin and fig over the wheat's softness rather than sugar. Expect a dessert-leaning bourbon — dried fruit, chocolate, nutty sherry oxidation — with the wheat keeping it round and the finish clean.
