Wolfburn Northland is the flagship of the northernmost distillery on the Scottish mainland, built in 2013 in Thurso on the site of an original Wolfburn distillery from 1821 and drawing its water from the same burn. Handmade by a tiny team, Wolfburn's whisky is unpeated at heart, and Northland gets a subtle coastal smokiness from a share of quarter casks that previously held peated Islay whisky.
Matured in ex-bourbon oak and finished in high-char American oak, and bottled at 92 proof, non-chill-filtered and naturally colored, in a 700mL bottle, it reveals vibrant sea spray, seaweed and citrus zest over vanilla and toasted oak on the nose, then a lively mix of orchard fruit, honeyed malt, light coastal salinity and warming spice, finishing long with oak, brine and gentle orchard sweetness.
