Carlito's is a small-label 100% blue Weber agave tequila from NOM 1598 in the Los Valles region of southern Jalisco. The production is traditional in the ways that count: agave cooked in an autoclave, crushed on a roller mill, fermented spontaneously in open stainless tanks with no added yeast, and double distilled in stainless pot stills with copper coils. The Blanco is unaged and bottled at 40% ABV, and it drinks the way a valley tequila should: raw cooked agave, a briny, mineral edge, black pepper, and a thick, oily texture that coats the glass and keeps unfolding as it sits. It's a bartender's blanco more than a sipper, priced to pour: margaritas, ranch waters, palomas, and anything else where you want the agave to show through the mixer.
