Castle & Key's Cask Strength Wheated Bourbon, released in November 2025, is the latest edition of the distillery's wheaters with two additional years of age — now seven years old and bottled at full strength, 54.1% ABV (108.2 proof), non-chill filtered. The recipe is 73% white corn, 10% white wheat, and 17% malted barley, and that white corn is the house signature: softer and more delicate in sweetness than yellow corn, which is why Castle & Key favors it across the range. The bourbon comes off the still at 135 proof and enters the barrel at an unusually low 107 — the old-school approach for wheated whiskey, which pulls more sugar and less harsh tannin from the #4 char new American oak — then ages in Warehouse B, the longest aging warehouse in the world, a surviving relic of Colonel E.H. Taylor's original 1887 Old Taylor Distillery that Castle & Key restored after its founding in 2014. Batches are blended from "pods," groups of barrels selected for a specific sensory profile. Expect oatmeal raisin cookie, vanilla frosting, baked peach, candied pear, orange peel, lilac, and soft cinnamon on the nose, opening into a rounder, creamier palate than the distillery's rye-recipe bourbon, finishing warm with honey and toasted oak.
