Hina is an old Japanese word for "countryside," and the name captures the setting: Hamakawa Shoten has brewed in Tano — a small coastal Kochi town wedged between mountains, rivers, and the sea — since 1904, and this Junmai Daiginjo reflects that quiet, unhurried refinement. It's brewed from Hyogo-grown Yamada Nishiki, the king of sake rice, milled to 45%, with the brewery's signature ultra-soft water from the subterranean Nahari River driving a long, cool fermentation. What makes The Gentleman distinctive within its class is restraint: it's noticeably drier and lighter than most Junmai Daiginjo, trading opulence for remarkable clarity — yet with surprising depth underneath. Expect prominent grapefruit aromas with delicate floral tones and soft orchard fruit, opening into a medium-light body of clean flavors, silky texture, gentle rice sweetness, and crisp minerality, finishing light and spritzy on bright citrus. Bottled at 15% ABV. This is Kochi seafood sake at its most polished — the importer's own pairing list reads like a raw bar menu: oysters, fatty tuna, bonito, raw squid, and lighter salads.
