Paladar is the newer project of the Orendain family, the people behind Arette and one of the last independent founding families still making tequila in the town of Tequila, Jalisco, with Eduardo Orendain Jr. as master distiller. The agave is seven-year blue Weber from the family's own fields, slow-cooked in brick ovens, fermented with a proprietary and wild yeast blend in open-air pine boxes, and twice distilled through copper and stainless alembic stills. Every bottle is hand-dipped in the volcanic soil of the agave fields. The Amburana is the family's most adventurous bottle: reposado-aged spirit that spends two months in ex-bourbon barrels and then two more in amburana, the Brazilian hardwood that whiskey and cachaça makers prize for its wild cinnamon-and-vanilla character. It's bottled at 40% ABV. Because amburana isn't an approved wood under tequila regulations, the label reads Destilado de Agave, but it's the same 100% blue Weber spirit from the same distillery. Expect a big aromatic hit of vanilla, nutmeg, and baking spice with a slightly sweet, rounded palate.
