Boat Yard Double Gin
Boatyard Double Gin comes from the Boatyard Distillery on the shore of Lough Erne in County Fermanagh, Northern Ireland, founded in 2013 by Joe McGirr in a converted boatyard near his hometown of Enniskillen. The base is organic wheat spirit, and the recipe is a juniper-heavy London Dry style: 86% juniper, 11.5% coriander, and small measures of liquorice root, angelica, orris, citrus, grains of paradise and sweet gale, the last one harvested from the McGirr family farm nearby. The 'double' is the method. The botanicals macerate in the spirit inside the still for 18 hours before distillation, and the vapor then passes through a second charge of juniper in a vapor chamber on the way out, so juniper hits the spirit at both the start and the end of the run. Bottled at 46% ABV. Drinkhacker's review found gentle pine and bright lemon peel on the nose, bold pine and pepper on the palate with a lemon-drop sweetness behind it, and gave it an A-. It is exactly what you want in a Martini or a dry Gin and Tonic when most modern gins have drifted too far from juniper.
