Rhum agricole is rum made from fresh-pressed sugarcane juice instead of molasses, and the French islands of Martinique, Guadeloupe, and Marie-Galante make the benchmark versions. Martinique's AOC sets the rules: cane juice only, column distillation, and set standards for blanc, élevé sous bois, and vieux. The result is grassy, vegetal, and bright when unaged, and closer to Cognac or Armagnac when it has spent years in French oak.
