Ki No Bi is the flagship dry gin from The Kyoto Distillery, Japan's first dedicated gin distillery, set in southern Kyoto City alongside sake producers that have been brewing for hundreds of years. The base is a rice spirit rather than grain neutral spirit, cut with soft groundwater from Fushimi, the district famous for its sake-brewing water. Eleven botanicals go into it, most of them Japanese: juniper, orris and akamatsu (Japanese red pine) for the backbone, yellow yuzu and lemon for citrus, gyokuro green tea from Uji, ginger, red shiso and bamboo leaves, and green sanshō pepper with kinome, the young leaves of the sanshō tree. Instead of distilling everything together, the distillery splits the botanicals into six groups (Base, Citrus, Tea, Herbal, Spice, and Fruity & Floral), distills each separately, then blends them and lets the gin marry in stainless steel before bottling at 45.7% ABV. The distillery describes a fresh yuzu aroma with a thread of sanshō, juniper that frames the Japanese botanicals rather than burying them, and a gently warming ginger finish with a hint of gyokuro. Dry and citrus-led, it's a natural for a gin and tonic or a stirred martini.
