La Escondida, "the hidden one," is an artisanal mezcal from Oaxaca, the heart of mezcal production, made from espadín (Agave angustifolia), the most widely planted agave in the state. It is produced the traditional way: the agave hearts are roasted for three to five days, then crushed with a tahona, the heavy stone wheel pulled around a circular pit by a horse. The crushed agave ferments with the aid of yeasts, and the mash is distilled twice in copper alembic stills before being bottled unaged at 40% ABV as a 100% agave blanco mezcal artesanal. The artesanal category is Mexico's official designation for mezcal made with these traditional methods. With no barrel time, everything in the glass comes from the roasted agave and the stills.
