Lazzaroni Amaretto Cherries
Lazzaroni is the family house in Saronno, in Lombardy, that has been making Amaretto Lazzaroni since 1851 and is best known for its Amaretti di Saronno biscuits. These cherries bring that amaretto into the cocktail glass. They're wild black amarena cherries from the Apulia region in southern Italy, selected, pitted and sweetened, then packed in a syrup flavored with Lazzaroni Amaretto, a liqueur made by macerating the house's Amaretti Chiostro di Saronno biscuits. The jar holds 400g (14.1 oz). The US importer, Laird & Company, describes deep ruby-red, glossy cherries with an aroma of candied cherry, toasted almond and spice, a sweet and tart flavor with marzipan, almond and ripe cherry, and a rich, syrupy finish with a lingering nutty sweetness. Compared with neon-red maraschino jars, these are darker and far less artificial, with real fruit flavor and a bitter-almond edge from the amaretto that suits whiskey drinks. Drop one into a Manhattan or Old Fashioned, use them to garnish a Whiskey Sour, or spoon the cherries and syrup over ice cream, panna cotta, cheesecake or cake.
