Neversink Spirits Gin
Neversink Spirits Gin is an American dry gin from Port Chester, New York, distilled on a base of 100% New York-grown apples, the same fruit behind the distillery's acclaimed apple brandy. Juniper is macerated overnight in the apple distillate, then ten more botanicals are vapor-infused in a custom Holstein hybrid still: coriander, cardamom, star anise, angelica, orris, lemon, orange and grapefruit peel, cassia and elderflower. It is bottled at 43% ABV (86 proof).
The apple base gives it a lush, silky texture that sets it apart from grain gins. Candied grapefruit peel leads the nose with juniper, coriander, green cardamom and elderflower behind, and the palate follows with candied grapefruit, honeysuckle and lychee, a thread of cinnamon and a satisfying kick of spicy juniper. It makes a superb Martini with a grapefruit twist and a wonderfully textured G&T. One of the most distinctive craft gins in the Northeast.
