Raising Glasses is an American independent bottler run by Lorri and John, a husband-and-wife team of longtime Scotch collectors who pick their own casks and bottle them in 375ml under their own label, and Ethereal, number 15 in their Folklore Series, is their single cask from O Reizinho, the small distillery on the Portuguese island of Madeira that has become a cult name among agricole drinkers. Madeira has grown sugarcane since the fifteenth century, before the Caribbean did, and its rum is made in the agricole style from fresh-pressed cane juice rather than molasses; O Reizinho distills that juice on a pot still, which gives it a heavier, grassier spirit than the column-still agricoles of Martinique. This cask spent three years in French oak that previously held Madeira wine, the island's fortified specialty, and was bottled at cask strength, 60.4% ABV, with no sugar, coloring or other additives. Raising Glasses describes it as savory and vegetal, with tarragon, toasted almonds, candied pear and zingy rhubarb, a rum that reads more like a young eau-de-vie than a sweet Caribbean pour.
