Scrappy's Orleans Bitters
Scrappy's Bitters was started in Seattle in 2008 by bartender Miles "Scrappy" Thomas, who, with only Angostura and Peychaud's on the market, rented a commissary kitchen under an Italian restaurant and made his own until neighborhood bartenders started placing orders. It was the first craft bitters company in North America, and everything is still handmade in small batches in Seattle from organic ingredients, with no artificial flavors, chemicals, or dyes. Orleans is Thomas's tribute to New Orleans and the bitters style associated with it: lively and bright, with anise coming through first, then cinnamon, citrus, and a floral lift, turning sweet in the middle and finishing on a delicate note of flower petals, bottled at 47% ABV in a 5 oz (148 ml) dasher bottle. It was designed with the Sazerac in mind, where it does the job of a Peychaud's-style bitters alongside rye and absinthe, and it brings the same anise and spice to a Vieux Carré, a Cognac Old Fashioned, or a Manhattan. There is no artificial color, so the red in the bottle comes from the ingredients.
