Tiki Lovers Pineapple Rum is The Bitter Truth's take on the old Caribbean practice of steeping pineapple in high-proof cane spirit, from the German bitters company's rum line built for tiki drinks. The rum underneath is a real blend, not a flavored base: aged and unaged pot-still Jamaican rum from Hampden Estate and Worthy Park, a three-year-old Foursquare rum from Barbados aged in ex-bourbon barrels, and young column-still rums from Guyana and Trinidad. Unfermented juice is pressed from South American pineapples, the water is removed so the fruit does not dilute the blend, and the resulting concentrate is added to the rum and rested for several weeks before bottling. Bottled at 45% ABV (90 proof) in a 750ml bottle. Reviewers describe fresh, roasted and canned pineapple on the nose, then a palate that starts sweet with fresh pineapple and kiwi, moves into caramelized pineapple with vanilla and baking spice, and turns darker and more tart on the finish.
