Woodinville Bourbon Whiskey
Woodinville Straight Bourbon is the flagship of Woodinville Whiskey Company, started in 2010 by Orlin Sorensen and Brett Carlile in Woodinville, Washington, with the late Maker's Mark and WhistlePig distiller David Pickerell as their mentor, and now part of Moët Hennessy, which brought the brand in during 2017. The mashbill is 72% corn, 22% rye and 6% malted barley, and every pound of grain comes from the Omlin family farm in Quincy, Washington. The whiskey is mashed, distilled and barreled at the distillery in Woodinville, then trucked over the mountains to the company's private barrel houses in central Washington, where hot summers and cold winters work the spirit into the wood. The barrels come from Independent Stave Company in Lebanon, Missouri, built from oak seasoned 18 months in open air and given a heavy toast and heavy char, and the bourbon rests in them at least five years before being proofed to 90 with purified Cascade Mountain water. Breaking Bourbon's 2024 review found crisp apple, cedar, vanilla and white peach on the nose, caramel, brown sugar, baking spice and rye spice on the palate, and a finish of vanilla, oak, leather and white peppercorn.
