Traverse City Whiskey Co. is the northern Michigan distillery founded by Traverse City native Chris Fredrickson with partners Jared Rapp and Moti Goldring, working from techniques Fredrickson's great-grandfather patented during Prohibition. The company sold sourced whiskey while its own spirit matured, then opened its Stillhouse in a former power station at 201 E. 14th Street in downtown Traverse City, where a 400-gallon custom Kothe still turns out the house whiskeys from Midwestern corn, rye and malted barley. Barrel Proof Bourbon sits at the top of the lineup: the same 71% corn, 25% rye, 4% malted barley mash bill as the flagship XXX, entered into new charred oak at 115 proof and bottled four years later without dilution, filtered only to pull residual charcoal from the barrel. The result lands around 112.8 proof depending on the batch. Breaking Bourbon's tasting found butterscotch, caramel and grain on the nose with faint lemon and orange, a dense palate of caramel, toffee and charred oak, and a finish of caramel and vanilla, calling it big and robust but surprisingly smooth for the strength.
