Wuliangye Yibin Company Chun Baijiu
Wuliangchun is the entry point into the Wuliangye range, made by Wuliangye Yibin Company in Yibin, Sichuan, the state-owned producer formed in 1950 from eight of the city's distilleries and now the second most valuable spirits brand in the world. Wuliangye literally means five grains, and the Chun shares the house recipe of sorghum, rice, glutinous rice, wheat and corn, fermented in mud pits in the long, ester-heavy style that makes Wuliangye the benchmark for nongxiang, or strong-aroma, baijiu. The company treats Wuliangchun as one of its four national strategic brands, positioned below the flagship 52% Wuliangye but made the same way at the same site. The Whisky Exchange's notes on the Wuliangchun Elegance bottling describe roasted pineapple, funky fermented-fruit notes, mango, honey and orange zest, with lively acidity and sweetness on the finish, which is a fair guide to how the strong-aroma style reads to a Western palate: tropical, savory and much more aromatic than the proof suggests. Multi-grain spirits were being made in Yibin as far back as the Song dynasty, and the Wuliangye name itself dates to 1909. Serve it at room temperature in small cups with food, as it is drunk in Sichuan.
