Clever Fox Reposado is the barrel-rested version of Clever Fox Silver, made by a small, woman- and minority-veteran-owned company distilling in north San Diego County, California, since 2022. The recipe took three years to develop, a stretch the founders spent with a 400-square-foot apartment full of jars of sugar and yeast, and it comes down to three ingredients: Louisiana sugar cane syrup, San Diego water and a San Francisco yeast strain. The wash is distilled in small batches on handmade copper pot stills rather than a column, and the result is bottled with 0 grams of residual sugar and no additives, flavorings or coloring, which is rarer in rum than it should be. For the reposado, the silver rum rests for a few months, the brand has listed three to five depending on the batch, in new American oak barrels, then is bottled at 90 proof (45% ABV) in 100% post-consumer recycled glass. Clever Fox describes it as spicy and invigorating, with oak, dried orange peel, caramelized banana, toffee, butterscotch, vanilla, caramel corn and a hint of jasmine.
