Clever Fox Silver is a small-batch white rum distilled in north San Diego County, California, by a woman- and minority-veteran-owned mom-and-pop company that has been making rum since 2022. The founders spent three years on the recipe before selling a bottle, filling a 400-square-foot apartment with jars of sugar and yeast until the fermentation was right, and the finished rum uses three ingredients: Louisiana sugar cane syrup, San Diego water and a San Francisco yeast strain. It is distilled in small batches on handmade copper pot stills rather than an automated column still, and bottled unaged at 90 proof (45% ABV) with 0 grams of residual sugar and no additives, flavorings or coloring; it is vegan and gluten-free, and the bottle is 100% post-consumer recycled glass. Clever Fox describes the Silver as chamomile, earthy, aloe and stone fruit, a daydream in a glass, and it has picked up medals at the San Diego Spirits Festival and the SIP Awards. At 90 proof it has more backbone than the big-brand white rums, which is the point: it holds up in a daiquiri or a mojito without disappearing behind the lime and sugar.
