Roaring Dan's Rum comes from Great Lakes Distillery in Milwaukee, Wisconsin, and it's named for Dan Seavey, the Great Lakes pirate of the early 1900s and the only man ever formally charged with piracy on the lakes. The rum is built on Grade A molasses and double distilled in pot stills, with a Wisconsin twist in the middle of the process: a dose of Wisconsin maple syrup is added before the second distillation, so the maple is carried into the spirit rather than simply sweetened in afterward. It then ages one to two years in a combination of new charred American white oak barrels and used bourbon casks, which adds vanilla, color, and a little structure, and it's bottled at 45% ABV (90 proof). The result is a rum that bridges the Caribbean and the Upper Midwest, pot-still molasses character with a maple and oak edge that makes it a natural fit for fall and winter drinks. Use it in a rum Old Fashioned with a barspoon of maple syrup, a hot buttered rum, or a spiked cider, or pour it neat alongside a bourbon to compare. It also makes a fine base for a rum punch.
