Humboldt Distillery was founded in 2012 in Fortuna, California, as the first micro-distillery on the state's North Coast, and it's still 100% owned and run by founder Abe Stevens, a fifth-generation Humboldt County native with degrees in chemistry and biochemistry from the University of Chicago. Stevens came to distilling from biotech and pharmaceutical work, and he runs the distillery like a scientist: the goal is to understand how and why each step works, not just to repeat tradition. Everything is small batch and built on certified organic, sustainably farmed domestic ingredients, with water drawn from the local redwood-forest watersheds. The Original is the distillery's certified organic rum, distilled from sugarcane and made as a light-bodied, easy-drinking gold rum, with the distillery pointing to aromatic hints of caramel and toffee.
