Mainland is an independent bottler in the Scotch mold: it sources mature casks of rum from distilleries across the continental United States and releases them one barrel at a time with full transparency, bottled as-is at cask strength with no blending, dilution, added sugar, coloring, or chill filtering. Its Louisiana casks come from Bayou Distillery in Lacassine, in the heart of Louisiana's sugarcane country, where the rum is distilled from local molasses and cane sugar. After eleven years in the humid heat of the Gulf Coast, this is an unusually old American rum, and the Gulf heat speeds the exchange between spirit and wood. Mainland's Louisiana rums have been described as showing sweet molasses, toasted nuts, leather, and oak, with a whisper of dark fruit. As a single barrel pick, this bottling is limited to what one cask yielded. Sip it neat and add water a few drops at a time.
