Old Harbor Barrelflag Rum
Old Harbor Distilling Co. is a craft distillery in San Diego's East Village, founded by Michael Skubic and producing spirits since 2015 in a 7,500-square-foot space built around a 1,000-liter copper pot still named The Belafonte. Barrelflag is Old Harbor's navy strength rum, and it's built for intensity. The ferment draws on three sugar sources: blackstrap molasses, the darkest and most heavily reduced grade, for depth and a bittersweet edge; table-grade molasses for rounder, aromatic sweetness; and evaporated cane juice for brightness. The wash is distilled on a hybrid pot and column setup and bottled unaged at 114 proof (57% ABV), the classic navy strength. The proof nods to the Royal Navy test of soaking gunpowder in rum to prove it hadn't been watered down. The heavy molasses blend gives it a big, intense flavor profile that stands up to citrus, spice and sugar, which makes it a natural fit for tiki drinks.
