Old Harbor Distilling Co. is a craft distillery in San Diego's East Village, founded by Michael Skubic and producing spirits since 2015 in a 7,500-square-foot space built around a 1,000-liter copper pot still named The Belafonte. The Adventure rum is the distillery's white rum, and its defining choice is the raw material: it's made from 100% sugar cane rather than molasses. Most white rums on the market start from molasses, the heavy byproduct of sugar refining, which brings darker, caramelized flavors. Cane sugar ferments cleaner and lighter, and Old Harbor describes the result as a light-bodied rum with a natural sweetness and a sweet, grassy note. That profile is exactly what you want in drinks where the rum should be bright and fresh rather than heavy. The distillery recommends it for daiquiris, piña coladas and as a base for tiki drinks, and it's just as good in a Mojito, a Hemingway Daiquiri or a simple rum and soda with a squeeze of lime. The distillery's core line also includes San Miguel Southwestern Gin and Barrelflag Navy Strength Rum.
